Biriyani, which is seen globally as a South Asian dish, its main origin is in Indian subcontinent. The word "Biriyani" is an 'Urdu' word, which has been derived from Persian Language. As per history, it was developed in Mughal kitchen but according to some other theories, it was in India before Mughals came here. Rice, many Indian spices, meat, egg and many more ingredients make this dish world famous. Though it is said that it was originated in North India, later on in various parts of India people started making it in their own way. Delhi Biriyani is said to be Mughali Cuisine, Lucknow Biriyani said to be Awadhi Cuisine, in Tamil Nadu they have their own style of biriyani, in Kerala they have Malabar and Thalassery Biriyani, Kolkata has their own style of biriyani with a piece of flavoured potato in it and many more.
For the last many years i have traveled many places in India and tasted all the possible types of biriyani. So, honestly if you ask me what is my favorite, i can't pick any one. But i can pick my top three. Again, this is not according to serially, which i will describe. These three place's biriyani will be always my pick and my recommendation to you all.
Hyderabadi Biriyani
Hyderabadi Biriyani is India's one of the most famous Biriyani. It is said that, Hyderabadi Biriyani developed at the time of Aurangzeb. The famous Hyderabadi Biriyani is also known as Dum Biriyani, where mutton or chicken is marinated and cooked along with the rice on slow fire.

Kolkata Biriyani
Kolkata, one of the best foodie state of India has their own style of biriyani. Though, it is said that, they evolved from the Lucknow Awadhi Style. Back in 1856, when Awadh's last Nawab Wajid Ali Shah came to Kolkata, he came here with his own checf. Kolkata biriyani uses primarily meat, egg and potato. Though it is much lighter in its spices than others, they flavored with rose water, saffron which gives the flavor, yellowish colour and the special biriyani smell.

Lucknow Biriyani
The city of Lucknow is famous for its kababs, korma and biriyani. The Lucknow biriyani is also called the Awadhi Biriyani. The Awadhi cuisines are influenced by the Nawabs of Awadh. Yellow chilli powder is used to make this biriyani.
Some of the famous restaurants are Lalla Biriyani, Wahid Biriyani.
